Co-owner and executive chef John Wilson brings more than 20 years of culinary experience to Bella Colibri. A Colorado Springs native and Culinary Institute of America alum, Wilson has honed his craft in some of the region’s most respected kitchens, including Udi’s, Garden Grace, Root Down, Linger, OTOTO, Colt & Gray, The Broadmoor, and The Greenbriar Inn.

At Bella Colibri, Wilson showcases rustic Italian cooking rooted in simplicity and bold, honest flavors. His philosophy is straightforward: let high-quality ingredients speak for themselves. 

As a 2025 Chef of the Year finalist at the Colorado Restaurant Association’s HOSPY Awards, Wilson is celebrated not only for his craft but also for his leadership and impact in Colorado’s culinary community. In addition to Bella Colibri, he helps shape Golden’s dining scene through his work at Old Capitol Grill & Smokehouse, Miners Saloon, The Brick Room, and Alchemy.
