Luke Miller

Originally from Libertyville, Illinois, Chef Luke Miller moved to Colorado in 2011, where his path from philosophy studies to the professional kitchen took shape. After earning his culinary degree from Johnson & Wales University, Chef Luke spent the next decade refining his craft in respected kitchens including The Denver Bread Company, Arcana, and Dry Storage, developing a deep passion for baking that continues to influence his cooking today.

His culinary voice is shaped by childhood family recipes, seasonal ingredients, and a baker’s attention to temperature, texture, and time. That perspective carries through every dish, from hand-shaped pastas and signature sourdough pizzas to addictingly delicious desserts that feel both familiar and refined.

In 2024, Chef Luke helped guide the evolution of the restaurant into The Greenwich 2.0, an Italian-inspired, seasonal concept rooted in tradition while embracing creativity and local sourcing.

The Greenwich

The Greenwich is a neighborhood restaurant in Denver’s RiNo Art District, rooted in family heritage, Italian tradition, and a deep love for gathering around the table. Founded by hospitality veteran Delores Tronco and led by former executive chef and current general manager Luke Miller, The Greenwich serves soulful Italian fare alongside seasonal cocktails and an approachable Old-World wine list.

Inspired by Delores’ Italian grandparents and her time in New York City, the restaurant evolved into The Greenwich 2.0 in 2024 — an Italian-driven concept centered on sourdough pizza, shareable small plates, and house-made desserts. In January 2026, The Greenwich entered a new chapter under the ownership of Drew Davis, a longtime New Yorker and recent Denver resident with over a decade of experience across acclaimed restaurant groups including Momofuku, the Alinea Group, and BL Gruppo — bringing new perspective while honoring the restaurant’s established spirit.

Whether it’s a weekday dinner or a special celebration, the menu is designed for connection and comfort. With a killer playlist, warm hospitality, and a space that feels both stylish and inviting, The Greenwich is a restaurant to return to, time after time.
